Winemaking
The grapes are hand harvested and carefully sorted in the vineyard and winery. Skin maceration takes place for Muscat over 1 night before the juices from the 2 varieties are put together and spontaneous co-fermentation is allowed to take place between Muscat and Malagousia in INOX tanks. The wine is bottled mid-fermentation, allowing fermentation to complete naturally in the bottle. There are no additions, fining, or filtration involved Maturation: aged on lees in the bottle for 6 months. The process culminates in manual disgorgement, and notably, no sulphur is added.
Tasting Note
Bursting with aromas of peach, white-fleshed fruit, and elderflower, it’s full-bodied, vibrant, and refreshingly effervescent—with bold acidity and persistent bubbles.
